Wild Rice with Turkey

Wild Rice with Turkey

Ingredients

  • 2 tbsp. olive oil
  • 1 onion, peeled and diced
  • 2 celery stalks, diced
  • 1 green apple, cored and diced
  • 12 ounces, smoked turkey breast (not deli slices, whole breast)
  • 1 tbsp. fresh thyme
  • 2 tbsp. parsley, minced
  • Sea Salt
  • 1 cup mixed wild rice (wehani, long grain, black rice, etc.
  • 2 cups chicken stock

Instructions

  1. In a frying pan, saute onion in olive oil for 2-3 minutes
  2. Add cremini mushrooms and cook 1-2 minutes, until tender-crisp
  3. Add celery, green apple, smoked turkey, thyme, parsley, plus a couple pinches of sea salt. Cook 3-5 minutes.
  4. Add rice and stock and bring all ingredients to a boil. Add a pinch of sea salt (if desired), lower flame and simmer for 35-40 minutes.
Herbed Chicken Salad

Herbed Chicken Salad

Ingredients

  • 16 ounces grilled chicken
  • 4-5 stalks celery, diced
  • 1/2 cup fresh cilantro, minced
  • 2 tbsp. fresh parsley, minced
  • 1/3 cup olive oil
  • 1/4 cup champagne or white wine vinegar (or to taste)
  • 1/2 teaspoon sea salt
  • Black Pepper to taste
  • 1 head red leaf lettuce, or other lettuce

Instructions

  1. Put cubed cooked chicken in a mixing bowl with a diced celery
  2. In a food processor combine cilantro, parsley, olive oil, vinegar, sea salt and black pepper
  3. Combine cilantro mixture with the chicken or tempeh
  4. Separate lettuce leaves and put a dollop of herbed chicken inside each lettuce leaf
Quinoa Tabouli

Quinoa Tabouli

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cucumber, peeled and diced
  • 1 small tomato, deseeded anddiced
  • 5-6 scallions, chopped
  • 1/2 cup parsley, chopped
  • 1/4 cup mint, chopped
  • 1 garlic clove, peeled and chopped
  • Juice of 1 lemon
  • 1/3 cup olive oil
  • 1/4 tbsp. sea salt

Instructions

  1. In a medium sized pot, bring quinoa and water to a boil
  2. Cover, reduce flame to simmer and cook for 10-12 minutes
  3. In a bowl, combine diced cucumber, tomato, and cooked quinoa
  4. Put scallions, parsley, mint, garlic, lemon juice, olive oil and sea salt in food processor and pulse for 2-3 minutes
  5. Mix dressing into salad
